Sooo I was going to make some red velvet cupcakes, then for some reason in my head I added cheesecake onto that lol. Well, I did a quick google search and found a ton of recipes, quite overwhelming, especially for me since I have made cheesecake in over 6 years and I've never made red velvet cake (I've honestly never eaten any either... but I have a box of mix waiting in the pantry I got on sale lol)
So any suggestions? Tips? Maybe a "tried and true" recipe?

for me, I truly dont understand the craze for red velvet since it is basically a chocolate cake with red food coloring to make it look red and the a creamcheese frosting. I just dont get the appeal of adding red food coloring. Just me I guess.
Do a chocolate based cheesecake and add some red food coloring and then maybe do a chocolate cookie base although an oreo can overpower the flavor.
