Here is the sugar-free cookie recipe that I made after chocolate chip mayhem. I've found this to be a very lenient recipe with everything I've played with so far, so it could probably be made gluten-free also.
1/2 cup butter
1/2 cup shortening
1 cup of honey (instead of 1 cup brown sugar and 1 cup granulated)
1 tsp baking powder
1 tsp baking soda
2 tsp vanilla
2 tbsp orange juice (I juiced the orange I zested)
orange zest from one orange
1 cup diced cranberries (can also be dried)
1 cup of raisins
2 cups whole wheat flour
2 cups rolled oats
1 cup chopped raw almonds
1/4 cup wheat germ (optional)
Beat butter and shortening on medium high for 30 secs. Add honey, baking powder, baking soda. Beat until combined. Add eggs, oj, zest, and vanilla until very well mixed. Add flour, oats, almonds, cranberries and raisins (and wheat germ).
Drop by rounded spoonfulls onto ungreased sheets. Bake for 8-12 mins or until lightly browned. Let cool and don't burn your mouth sneaking one while they are still hot.
