If I know I'm going to be short on time, I make a slow-cooker meal like spicy roast chicken or beef roast.  If it's a spur of the moment thing, a main dish salad works great.

I usually make slow-cooker barbecued chicken, rice (in the rice cooker) and steamed broccoli (made in the microwave...) my little girl loves it! I can even use the "less expensive" chicken (frozen skinless, boneless breasts or thighs...) being cooked on low for 8+ hours (while we are out and about...) makes them tender, juicy and yummy!

If I've forgotten tote anything out of the freezer or defrosted something overnight I make spaghetti with shrimp in a spicy tomato sauce.. Hubby thinks it is the best... That plus a quick salad made out of bagged greens and dinner looks pretty darn good!

I like to make something in the slow cooker if I know that I won't be able to spend a lot of time on dinner.
