Crock Pot Mediterranean Chicken

Sorry I haven't posted any crock pot recipes lately! After my son's hospital visit and then traveling for the weekend to shoot a commercial for my gym, I did not meal plan for last week! I ended up doing the "last minute dinner scramble" every day last week. It was awful!!! I meal planned for this week, so I will be actually cooking again! ...well, other than Thanksgiving!

Anyway, here is today's recipe... I did a Mediterranean chicken dish that had artichoke hearts and olives in it. My kids are not a fan of either, so I just made them a kid-friendly meal and saved this dish for me and my husband. I made a side of Mediterranean couscous by Near East. It had a curry flavor to it. Both the main dish and the couscous were REALLY good. I loved this. I love artichoke hearts and olives, though! I have never cooked with them! This was really yummy. My husband had THIRDS. He loved it. :) We have NO leftovers. ;)

    These kinds of dishes wouldn't do well in my house. Not big on olives and tomatoes

    It's food.  I don't think it looks nasty -- it looks like food.  It's a chicken breast with tomato, olive and artichoke hearts on it.  And couscous on the side.  *Shrugs*
