Keeping Leftovers Fresh

I love leftovers. There, I said it. While most people dread having to have the same thing two nights in a row, I know that I can almost always make a new dish out of last night's dinner. Left over rice and veggies from Chinese food? Make egg friend rice. Left over meatloaf? Make delicious open-faced sandwiches.

But the key to making good meals out of leftovers is all how you store it the night before. I like to use tinfoil because it keeps meats moist and allows steamed or grilled veggies to keep their crispness. You can do this by making a pouch out of the tinfoil similar to the pouch that you would use for cooking on the grill or in the oven. And, if you decide not to use your leftovers, the packages are good to go for the freezer.

    I love to use leftover chicken in gravies, sandwiches, and soups.

     We do not really eat leftovers. The only thing we do eat is pizza the next day for lunch.

    Good ideas!  My kids like pizza.  Tacos and pot roast are good to reserve.

    Left over pizza is great, though I'm eating left over red beans and rice right now and it tastes better today than it did last night...yummy
