This was really delicious and it's pretty healthy as well. There are not a ton of ingredients and it was really quick to prep. You rub the spices on the meat before adding it to the pot of tomatoes, chiles and black beans and then let it cook for a few hours. The meat was cooked perfectly and easy to shred. There was enough spice to give it flavor, but not so much that the kids wouldn't eat it (they don't like hot foods). I served it with a side of Mexican rice, light sour cream, shredded cheese and freshly cut avocados.
