I always make either mac&cheese or scalloped potatoes with ham.

baked sweet potatoes or squash work really well with ham. mashed potatoes pretty much go with just about everything and a fruit salad maybe?  you could also go with mac & cheese or baked zuccini with cheese and bread crumbs..

Either augratin or scalloped potatoes or what we call company potatoes (frozen hashbrowns, with sour cream, cream of chicken soup, green onions, and cheese), also a ham sauce (pineapple, cinnamon, brown sugar thickened with cornstarch slurry) a fruit or jello salad, hot rolls.  This in the winter.  And, as another poster said, baked beans and potato or macaronic salad in the spring and summer.

I have done any of these with ham at one time or another:
Mash potatoes, baked potatoes, cheesey hash brown potatoes, au gratin potatoes, Mac and cheese, baked beans, cheesey broccoli, potatoes and green beans, salad, and I'm sure there's more but these are what come to mind.
