We have always carved. But this year we are painting so that they don't rot so fast.

I think both would be a fun experience. If you are worried about not making a good carving there are a lot of free printable pumpkin carvings to follow online.

Paint because it doesn't rot as fast.  One year, a friend  put a  whole pumpkin outside and the squirrels bit into it.
