breakfast – red flannel hash, poached eggs, veggie juice
lunch – butternut squash soup, double chocolate zucchini muffins
dinner – crockpot beef in mushroom gravy, green beans, mashed potatoes, butternut crisp
Monday:
breakfast – freezer grab bag (pancakes, waffles), veggie juice
lunch – leftover squash soup, salad, muffins
dinner - chicken alfredo, salad
Tuesday:
breakfast – eggs in ham cups, veggie juice
lunch - leftovers
dinner - beef & cheese spaghetti squash casserole, steamed broccoli
Wednesday:
breakfast – pumpkin custard, hard boiled eggs, veggie juice
lunch – sausage & spinach soup
dinner - taco lasagna (from freezer), Mexican corn salad
Thursday:
breakfast – veggie hash & eggs, veggie juice
lunch – fried whitefish, side salad, beet pickles
dinner - cabbage & ham hock stew, paleo apple cinnamon muffins
Friday:
breakfast – apple pumpkin bake, veggie juice
lunch – beef & veggie soup (homemade), leftover muffins
dinner - honey mustard chicken, oven fries, green beans, baked apples
Saturday:
breakfast - huevos rancheros, veggie juice
lunch – chef salad
dinner - almond flour crust pizza

What is red flannel hash? I have never heard of it.

it's made with shredded beets...other recipes call for the beets to be mixed with shredded potatoes, but because I eat low carb I use 100% beets.
I shred fresh, peeled beets...add onion and pepper....sautee in butter until cooked.

That sounds good, we eat lower carb also. My DD doesn't like beet, so I don't use it as much as I would like. The low carb explains almond flour pizza, I wondered. We always have cauliflower crust pizza.My family doesn't necessarily follow low carb, but they do follow my meal plan. For example, they'll have mashed potatoes tonight, but I won't.
They really, really protested losing pizza b/c of the bread crust, so the almond flour crust is a compromise, really. I've also got a pizza frittata recipe that is FABULOUS!
