Coconut flour pumpkin muffins gaps scd paleo

Coconut Flour Pumpkin Muffins

Yield: 10 muffins

Ingredients

  • 1/2 cup coconut flour
  • 4 eggs, at room temperature
  • 1/4 cup softened butter, real lard or coconut oil
  • 6 Tbs. pumpkin pureé (or squash or carrot pureé)
  • 2 Tbs. raw honey
  • 1/2 tsp. cinnamon
  • 1/8 tsp. freshly grated nutmeg
  • 1 tsp. apple cider vinegar
  • 1/4 tsp. baking soda

Instructions

  1. Preheat the oven to 350 degrees and line 10 muffin cups with liners.
  2. Stir together the coconut flour and eggs until a smooth paste forms. Stir in the butter/lard, then the pumpkin pureé and honey. Then mix in the spices, cider vinegar and baking soda.
  3. Divide between prepared muffin pan. Bake for about 25-30 minutes, until golden and the top springs back when lightly pressed.

    These look good, but I'd think there would me more "pumpkin" color.

    Hadn't thought about that.  My pumpkin pancake recipe calls for the same amount of pumpkin puree and they aren't very pumpkin colored either.

    Both my pancake and muffin recipes call for more pumpkin, too.  They're definitely orange!

     Do you do the paleo diet? This would be a great recipe for paleo. I tried it before I found out that I was pregnant, and ever since I did that diet I can only eat have the amount I used to eat before paleo. I won't do that diet again but would love to try these muffins, they sound awesome :)

    Thanks!  My kids might actually eat these since they aren't too orange--they have aversions to baked things with fruit or veg.  :)  These look great, and I have some coconut flour wasting away in my fridge...

    I don't, but some here do. I do like to use alternative ingredients from time to time though.

    I've never heard of coconut flour.  Sounds interesting.

    Coconut flour is high fiber. When using it in recipes (as a substitution) you have to add eggs. Just FYI if you try it in other recipes.
