This is the official recipe from the restaurant in New Orleans. My sister and I were there for a wedding and enjoyed a beautiful Sunday brunch sitting in their sun dappled courtyard. My sister fell in love with these, and I was able to get the recipe for her from a friend. Glazed Sweet Potatoes-Court of Two Sisters 1/2 cup melted butter 1/2 cup sugar 2 beaten eggs 1 teaspoon vanilla 1/3 cup milk 6 cups sweet potatoes, peeled, cut into 1" cubes steamed and cooled. Combine butter, sugar, eggs, vanilla and milk in a bowl and stir well. Fold in sweet potatoes, and place in 2-qt casserole. Top with topping (see recipe below). Bake at 350 for 20-25 minutes. Yield: 10-12 servings. Topping: 1/2 cup melted butter 1 cup dark brown sugar 1/2 cup flour 1/4 teaspoon cinnamon Pinch nutmeg 1 cup chopped pecans Mix together well.
<-- I am just picky about texture on things I dislike any beans except green beans, sweet potatoes, I like raw vegetables but dislike cooked carrots, and celery... just plain weird lol but I cook them for Father and DD .. I don't want her growing up not eating something because I wont.
