Like, though it depends on how it's cooked.  I don't like when it's cooked to the point that it's mushy.

I just made a roasted harvest vegetable mix that I just couldnt stop eating that had butternut squash, sweet potatos and carrots.  Im not a huge fan of yellow squash though.
