Low Fat Mexican Macaroni and Cheese

About This Recipe
"Found this in a Weight Watcher's cookbook of recipes from the magazine in 2000. This is fast to make and has a nice flavour. Not a zingy dish, but the kids and I enjoyed it. 2/3 of a cup is 3 WW points."
Ingredients
- 8 ounces uncooked elbow macaroni
- 5 ounces light processed cheese ( Light Velveeta)
- 1 teaspoon taco seasoning
- 1/2 cup salsa
Directions
- Boil water for the macaroni. Cook the noodles in the water until done, usually 7-9 minutes.
- While the noodles are cooking cube the cheese.
- When the noodles are done drain them and then return to the pan.
- Add the cubed cheese and taco seasoning. Stir well, until the cheese is melted.
- When melted, add the salsa and serve.

"These are great as a quick and fun weeknight meal. My fiance came up with this one when he was out of town for a week. When he came back and shared it with me I was really surprised with how good they were."
Ingredients

- 1 (8 ounce) cans Pillsbury Refrigerated Crescent Dinner Rolls
- 3/4 cup pizza sauce or 3/4 cup pasta sauce
- 8 small breakfast sausage links
- 4 pieces mozzarella string cheese, cut in half
Directions
- Preheat oven to 350°F.
- Unroll the croissant dough and place the individual doughs on a greased cookie sheet.
- Spread a tablespoon of pizza sauce on each one of them.
- Place a sausage and half a string cheese at the long top part.
- Cut off the excess cheese that will hang out the sides.
- Roll them up and bake for 15 minutes or until heated the whole way through.
- Don't let the cheese melt to much though or it will go everywhere.

- 1 (26 ounce) jars pasta sauce
- 1 (30 ounce) bags frozen large cheese ravioli, unthawed
- 1 (10 ounce) boxes frozen chopped spinach, thawed and squeezed dry
- 1 (8 ounce) bags shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
Directions
- Heat oven to 350 degrees F.
- Coat a 13-by-9 inch baking dish with cooking spray and spoon in a third of the sauce.
- Arrange 12 ravioli on top and scatter the spinach over them.
- Top with half of each cheese.
- Cover with another layer of ravioli and the remaining sauce and cheese.
- Cover with foil and bake 25 minutes.
- Uncover and bake 5 to 10 minutes more or until bubbly.

- 2 lbs boneless skinless chicken breasts
- 2 (10 1/2 ounce) cans condensed cream of chicken soup
- 1 (10 1/2 ounce) cans condensed cheddar cheese soup
- 1/4 teaspoon garlic powder
- salt and pepper (optional)
Directions
- Place chicken breasts in the crock pot.
- Mix the undiluted soups together with the garlic powder and pour over chicken.
- Cover and cook on low 6-8 hours , until chicken is tender.
- Serve with the delicious sauce over rice or noodles.

"Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!"

- 4 boneless skinless chicken breast halves
- 4 -5 teaspoons taco seasoning mix
- 1 cup salsa
- 1 -1 1/2 cup shredded cheddar cheese
- 2 tablespoons sour cream (optional)
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- Place chicken breasts in a lightly greased 9x13 inch baking dish.
- Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
- Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
- Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly.
- Top with sour cream if desired, and serve.

No Name Yummy Beef Dinner (if you know of the name let me know - it's been a family favorite forever - true comfort food that just so happens to be easy - Yea!)
1 lb ground beef
1 green pepper
1 small onion
2 cans Beef or Brown Franco American Gravy
Rice
brown ground beef with pepper & onion with your fav seasonings - I like black pepper, Italian seasoning and Garlic Powder. Add the cans of gravy. Stir to blend and then serve over rice.
