  • this is off the duggar's family website...but make it according to your family size...

    2 lb ground turkey cooked, seasoned, drained
    3 2lb bags tater tots 
    2 cans cream of mushroom
    2 cans evaporated milk
    2 cans cream of chicken
    Brown meat & place in large cass. dish.
    Cover with tater tots. Mix soup & milk together.
    Pour over top. Bake at 350 for 1 Hour.
    (One of Daddy’s Favorites!) Makes 2- 9”X13” pa

    I like to double recipes and freeze one for a night when I don't feel like cooking.


    Beans and Franks Casserole

    2 packages (8-1/2 ounces each) corn bread/muffin mix

    1 can (28 ounces) baked beans

    4 hot dogs, halved lengthwise and sliced

    1/2 pound sliced bacon, cooked and crumbled

    1 cup ketchup

    1/2 cup packed brown sugar

    1/2 cup chopped onion

    2 cups (8 ounces) shredded part-skim mozzarella cheese

    Prepare corn bread batter according to package directions; set aside. In a large bowl, combine the beans, hot dogs, bacon, ketchup, brown sugar and onion. Transfer to two greased 8-in. square baking dishes. Sprinkle with cheese; top with corn bread batter. 
    Cover and freeze one casserole for up to 3 months. Bake the second casserole, uncovered, at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. 
    To use frozen casserole: Remove from the freezer 30 minutes before baking. Cover and bake at 350° for 40 minutes. Uncover; bake 15-20 minutes longer or until heated through.

    Chicken Pesto Pasta with Asparagus

    The other week I received a gift package in the mail containing a vast array of healthy mixes and sauces. To get a feel for these new products, I decided to try out the classic pesto sauce first.

    The pesto mix (and most of the others) are very simple. Basically dried herbs and some spices. I’m sure dishes would taste much better with say pesto made from fresh basil instead of dried, but for someone who gets home tired from work this worked out just fine.
    I like that there is not a lot of fat or sodium included in the mix. This allows the user to choose if they want a healthier or more decadent dish. Of course for my chicken pesto pasta with asparagus I leaned towards the healthier side.

    According to the directions you can use water instead of butter for the pesto sauce. I was very skeptical, water = butter?! But I have to say, I didn’t even miss the butter. There was more than enough taste with the chicken, herbs, and spices.

    Bottom line: This was a great dinner and I’m looking forward to trying out the rest of my new pantry stash!

    2 pieces chicken breast
    2 cups dry whole wheat penne pasta
    1 1/2 cups chopped asparagus
    1/2 package of dry pesto sauce mix (0.25 oz.)
    1/2 to 3/4 cup pasta water
    1 Tbsp salt
    1/2 tsp garlic salt
    1 Tbsp olive oil
    1/2 tsp red chili flakes (optional)

    The main ingredients in the pesto mix that I used were: Basil, garlic, Romano cheese, salt, and parsley.

    Boil the dry pasta in water with 1 Tbsp of salt. Cut the chicken and asparagus into bite sized pieces. Season the chicken with 1/2 tsp of garlic salt. In a large pan, lightly brown the chicken in just a teaspoon or so of olive oil. When the chicken is cooked, add the asparagus to the pan.

    After cooking the chicken and asparagus for a couple minutes, add in the pasta water, pesto mix, and 2 tsp of olive oil. Finally, add the pasta in with any other additions you want, such as red chili flakes or a little grated Parmesan cheese.

    This chicken pesto pasta with asparagus is made healthier by using whole wheat pasta. But the majority of the calorie and fat savings comes from using water instead of butter in the pesto mix. I had my reservations, but it worked!

      1 lb. hamburger
      1 pkg. taco mix
      1/4 c. milk
      1 can cream of chicken soup

      Brown and drain hamburger. Prepare taco mix according to packet. Spread mixture over casserole dish. Heat cream of chicken soup with 1/4 cup of milk. Pour over hamburger mixture. Lay slices of cheese on top. Line tater tots on top of cheese and bake for 30 minutes or until brown.

      Taco Casserole -
      2 lbs hamburger
      1 pkg. dry spagetti sauce mix
      1-8oz pkg. shredded American cheese
      1-8oz pkg. shredded Mozzarella cheese
      1-8oz pkg. Nacho Cheese Doritos, crumbled
      1 c. tomato juice

      Brown hamburger and drain. Add tomato juice and sauce. Mix. Simmer. In 9x13 pan, layer crumbled Doritos, cheese, meat mixture, cheese, and Doritos. Bake 15 minutes at 350.

      TACO CASSEROLE -     
      1 reg. bag Dorito chips
      3 cans chili
      2 c. grated cheese

      Line 11 x 14 inch pan with chips. Heat chili and pour over chips. Cover with cheese and bake at 350 degrees until cheese is melted.

      Taco Casserole -

              1 lb hamburger
              1 (1 1/4 ounce) taco seasoning, packet
              2 cups cheddar cheese, shredded
              2 cups nacho chips, crushed


       Brown hamburger, drain,.
       Add seasoning mix according to the instructions on the package.
       In a 2 Quart casserole place a layer of chips, top with a layer of taco mix, then a layer of cheese.
       Repeat these layers 1 more time.
       Bake at 250 until cheese melts. About 20 mins.

    Scalloped potato & chicken casserole is one of my favorites, and super easy!
    Mix the cheese (powder) from the box of scalloped potatoes with 1 can of cream of chicken soup and 1 3/4c hot water. Then add the potatoes and whatever veggies you like (I add frozen broccoli and carrots). Pour all of this into a greased casserole dish. I lay several chicken breasts (or whatever cut of chicken I have on hand) right on top and sprinkle meat with seasoning. Bake at 400 for about an hour or until chicken is done.

      Ham & Potato Casserole
      1 bag of potatoes O’brien (diced potatoes with onion and green pepper)
      1-2 cups cubed ham
      2 cups broccoli florets
      1 can cream of broccoli soup
      1/3 cup milk 
      1/4 teaspoon black pepper
      Mix all ingredients together and pour into casserole dish, cover and bake at 350 for 45 minutes-1hour or until heated through and bubbling around edges..

      Ham & Noodle Casserole
      8 oz. bag noodles or pasta
      1-2 cups cubed ham
      1 can cream of mushroom soup
      1/3 cup milk
      Cook noodles or pasta according to package directions. Mix all ingredients together and pour into casserole dish. Cover and bake at 350 for 30-45minutes or until heated through and bubbling around edges.

      Notes: leftover rice is also good to use.

      Ham & Broccoli Bake

      1-(20 oz) package frozen broccoli 
      1 small onion, chopped
      1 (10 ¾ oz) can cream of mushroom soup
      1 (10 ¾ oz) can cream of broccoli soup
      1 cup milk
      1 cup (8 oz) shredded cheddar cheese
      2 cups cubed cooked ham
      2 cups leftover cooked rice
      2 teaspoons Worcestershire sauce

      Preheat oven to 350. Cook broccoli, drain well. Sauté onion in butter till soft. In large mixing bowl, stir together soups, milk and cheese. Add broccoli, onion, ham, rice and Worcestershire sauce. Mix well and transfer to baking dish. Bake, covered for 30-45 minutes
