Can you use fleece for a cover ? Anything I should know abt sewing with it?

Yes you can. You need the thicker fleece so no microfleece or thinner anti pill fleece. Usually places like joanns have polar or blizzard fleece.
Fleece Is water repelling not water proof. It also can leak when compressed. It is very breathable.

And as far as sewing with it, when I sew with fleece I use a stretch fabric needle on my machine and use a little longer stitch length.

Your machine probably has an all purpose needle on it. If you don't have different needles I wouldn't worrying about it. A stretch fabric needle just makes sewing with stretchy fabrics (like fleece or knit) easier. An all purpose needle will work fine thougb
